Well, in my country, such thing happened because of certification wise. Although I cooked in the staff quarters during my 20s, cooked in the monastery in my 30s, and helped in minor misen place in the kitchen when my housekeeping duties were done, I wouldn't be able to move up fast if I begin as a kitchen assistant or cook 1. People nowadays came in with bachelor degree specifically in culinary or pastry.
